Jack Skellington Sugar Cookies

It's a long weekend here in Canada... Happy Thanksgiving!!

So what better excuse than to spend the day baking (honestly, we don't need an excuse).

To go along with next week's (trick or) treat episode, we thought we'd share this Jack Skellington Sugar Cookie recipe from the book - Delicious Disney, Holidays by the Disney Chefs and Pam Brandon. Find it here - https://amzn.to/30PUGWh

Ingredients: (Makes 18 Cookies)

Cookies -

2 1/2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup butter, softened

1 cup sugar

2 eggs

1/2 teaspoon vanilla extract.

Icing -

2 egg whites

3 cups confectioners sugar

1/2 teaspoon almond extract

Black food colouring paste

Cookies -

  1. Combine dry ingredients in a medium bowl. Set aside.

  2. Beat butter and sugar until smooth, Mix in eggs and vanilla.

  3. Add flour mixture in three parts.

  4. Once dough comes together, cover bowl with plastic wrap and place in the fridge for 1 hour.

  5. Preheat oven to 400F

  6. Ona floured surface, roll out dough to 1/4 inch thickness. Using a round cookie cutter, cut dough into circles (roughly 3 1/4 inches in diameter)

  7. Place the cookies on an uncreased cookie sheet an inch apart.

  8. Bake for 8-10 minutes until golden brown. Cool completely before icing.

Icing -

  1. Whisk egg whites until frothy, add confectioners sugar a little at a time, until mixture is thick but spreadable,.

  2. Place one third of icing mixture into a separate bowl. Add black food colouring paste and stir.

  3. Decorate the cooled cookies by covering them in white icing and allowing them to set.

  4. Place black icing in a plastic bag or piping bag and cut off a tiny corner to create a small hole. Use black icing to draw eyes, nostrils, and stitched mouth.

Make sure to share a picture with us before you devour them!!
